For this wine pairing we don't want to over power the medium bodied Chianti Classico. To compliment the tertiary characteristics of the wine we will incorporate seasonings of rosemary, thyme, fennel, smoked paprika, white & black pepper. The acidity in the wine will be balanced with the sweetness of the balsamic reduction and the saltiness of the prosciutto and fennel infused salami.


Rosemary & Smoked Paprika cured Pork Tenderloin with Pancetta Balsamic Thyme reduction, Caccio de Pepe Fettucine with All Apice & Truffle Butter, Portobello with Provolone Rosemary Salami, Cherry Carmelized Onion, Carrot Puree
